We present a home-style take on a drink featured on a new drinks list. Designed as a party-sized pre-mixed that's bursting full of essence associated with Christmas time, making it perfect for a celebration. Reserve the remaining syrup for breakfast cocktails, sweets, or to make another batch of the drink.
The Bikini Cocktail
Serves 10 people
Ingredients for the Citrus Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Drink (yields 850ml, enough for 10)
400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch
Instructions
Making the Syrup: Put the listed ingredients inside a pot, bring to a gentle boil, agitating to dissolve. Next, turn off the burner and let it to cool down entirely. Decant into a clean bottle, close it and refrigerate it in the fridge, it will last for up to four weeks.
For the Batch Mix: Pour the specified liquid ingredients in a sizeable container, let it rest for one hour, then strain , ideally through cheesecloth, making it completely strained.
When ready to serve: Measure 85ml of the batch mix into your stirring glass packed with ice, gently stirring gently for about 60 seconds until cold. Pour into an cold coupe glass or similar, decorate with the cranberries and finish with a light spray of mandarin oil over the drink.
